Black Bean and Spinach Lasagna


Prep Time/Stats

20 - 30 minutes for prep, 45 minutes for baking.

Suggested Hardware

9 X 13 Lasagna pan.

Ingredient List

Lasagna Noodles | Ricotta Cheese | Boiled Spinach | Cilantro | Black Beans | Cumin | Chili Powder | Cayenne Pepper | Black Pepper | Monterey Jack / Pepper Jack Cheese


Process


Noodles

  • Start with following the preparation of the noodles by following the directions on the box. TIP: When boiling noodles, add a shot of extra virgin olive oil. This will help prevent the noodles from sticking.

Filling

  • In a large bowl, add about 16 ounces of ricotta cheese, boiled spinach, chopped cilantro, cumin, chili powder, and cayenne pepper. Mix together.
  • In a separate bowl mash up 1 - 2 cans of black beans (you can also use beans that you prepped as well - about 2 cups worth). Once mashed, you can add this to the filling and mix all together.

Putting It Together

  • Lightly grease the bottom and sides of lasagna pan or tin.
  • Add one thin layer of the filling goes on the bottom.
  • Add single layer of noodles.
  • Add another layer of filling. Top this layer with cheese. If you have any beans left you can also add them to this layer.
  • Top off with another layer of noodles

Once this is all put together, cover your pan with tinfoil. Place in a 350 degree oven and bake for 50 minutes. After 50 minutes, remove from the oven and remove the tinfoil. Drizzle some taco sauce to your desired liking and then another layer of cheese. Place back in the oven and bake for another 5 minutes (give or take depending on how long it takes for the cheese to melt).

Once removed, let cool for at least 5 minutes, then serve.
